  • 1 Medium pot For boiling noodles and eggs
  • 1 Mixing Bowl For preparing the sauce

Ingredients
  

  • 200 g Soba noodles
  • 2 Eggs Soft-boiled
  • 1 cup Carrot Julienned
  • 1 cup Cucumber Julienned
  • 1 cup Red bell pepper Sliced
  • 2 tbsp Sesame seeds Toasted
  • to taste Salt
  • 1/4 cup Soy sauce Low sodium
  • 2 tbsp Rice vinegar
  • 1 tbsp Sesame oil
  • 1 tbsp Honey Or maple syrup for a vegan option
  • 1 tsp Fresh ginger Grated
  • 1 clove Garlic Minced

Instructions
 

  • Cook soba noodles according to the package instructions, drain, and rinse under cold water.
  • In the same pot, bring water to a boil, add the eggs, and cook for 6-7 minutes for soft-boiled eggs. Transfer to an ice bath to cool, then peel.
  • In a mixing bowl, combine soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic to make the sauce.
  • In a large bowl, toss the soba noodles with the sauce until well coated.
  • Divide the noodles between two serving bowls, top with julienned carrots, cucumber, red bell pepper, and soft-boiled eggs cut in half.
  • Sprinkle toasted sesame seeds on top and season with salt to taste.

Notes

To make this dish gluten-free, use gluten-free soba noodles and tamari instead of soy sauce.
