- 1 can (14.5 oz) crushed tomatoes
- 1/2 tsp red pepper flakes (adjust to taste)
- 4 large eggs
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
- Salt and pepper, to taste
- Crusty bread, for serving
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Stir in garlic and red pepper flakes and cook for an additional 1 minute.
Add crushed tomatoes, salt, and pepper to the skillet, and simmer for 10 minutes, stirring occasionally.
Create 4 wells in the sauce and crack an egg into each well. Cover and cook for 5-7 minutes, or until eggs reach desired level of doneness.
Sprinkle Parmesan cheese and parsley over the top and serve immediately with crusty bread for dipping.
