Equipment

  • 1 9-inch Pie Dish
  • 1 Skillet For cooking bacon and spinach

Ingredients
  

  • 1 piece Pre-made pie crust Or your favorite homemade crust
  • 6 slices Bacon Chopped
  • 2 cups Fresh spinach Washed and chopped
  • 4 Eggs Beaten
  • 1 cup Milk Whole or 2%
  • 1/2 cup Heavy cream
  • 1 cup Shredded cheese Swiss or Cheddar
  • to taste Salt and black pepper
  • 1/4 tsp Nutmeg Ground, optional

Instructions
 

  • Preheat oven to 375°F (190°C). Line a 9-inch pie dish with the pie crust. Crimp the edges as desired.
  • Prick the bottom of the crust with a fork. Place parchment paper over the crust and fill with pie weights or dried beans.
  • Bake for 10 minutes, then remove weights and parchment and bake for an additional 5 minutes. Set aside to cool.
  • In a skillet over medium heat, cook chopped bacon until crispy. Remove bacon and set aside. Drain excess grease, leaving about a tablespoon in the pan.
  • Saute spinach in the same skillet until wilted. Spread the spinach and bacon evenly over the bottom of the pre-baked crust.
  • In a medium bowl, whisk together eggs, milk, cream, salt, pepper, and nutmeg. Stir in the shredded cheese.
  • Pour the egg mixture over the spinach and bacon in the crust.
  • Bake at 375°F (190°C) for 35-40 minutes, or until the quiche is set and the top is golden brown.
  • Let cool for a few minutes before slicing. Serve warm.

Notes

For a lighter version, substitute half of the eggs with egg whites and use low-fat milk instead of whole milk and cream.
