Ingredients
  

  • 1 sheet Pie crust Pre-made or homemade
  • 200 g Fresh spinach Chopped
  • 150 g Feta cheese Crumbled
  • 3 Eggs Large
  • 1 cup Milk Whole or 2%
  • 1 tsp Salt
  • 1/2 tsp Black pepper Freshly ground
  • 1 tbsp Olive oil For sautéing spinach

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Roll out the pie crust and fit it into a 9-inch pie dish. Trim excess and set aside.
  • Heat olive oil in a pan over medium heat. Add chopped spinach and sauté until wilted.
  • In a mixing bowl, whisk together eggs, milk, salt, and pepper.
  • Spread the sautéed spinach over the pie crust, followed by crumbled feta cheese.
  • Pour the egg mixture over the spinach and feta, ensuring even distribution.
  • Bake for 35 minutes or until the egg is set and the top is golden.
  • Let cool slightly before serving. Enjoy warm or at room temperature.

Notes

For a gluten-free version, use a gluten-free pie crust. You can also add sun-dried tomatoes for extra flavor.
