- 1 tbsp vegetable oil
- 4 small flour tortillas
- 1 large ripe avocado, pitted, peeled, and sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup salsa of your choice
- Lime wedges, for serving
In a bowl, beat the eggs and season them with a pinch of salt and black pepper.
Heat the vegetable oil in a large non-stick skillet over medium heat. Add the beaten eggs and cook until set, stirring occasionally. Remove the skillet from the heat.
Warm the flour tortillas in the microwave for 15-20 seconds or in a dry skillet for a few seconds on each side.
