Ingredients
  

  • 4 large eggs
  • Salt and black pepper, to taste
  • 1 tbsp vegetable oil
  • 4 small flour tortillas
  • 1 large ripe avocado, pitted, peeled, and sliced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup salsa of your choice
  • Lime wedges, for serving

Instructions
 

  • In a bowl, beat the eggs and season them with a pinch of salt and black pepper.
  • Heat the vegetable oil in a large non-stick skillet over medium heat. Add the beaten eggs and cook until set, stirring occasionally. Remove the skillet from the heat.
  • Warm the flour tortillas in the microwave for 15-20 seconds or in a dry skillet for a few seconds on each side.
  • To assemble the breakfast tacos, divide the cooked eggs, sliced avocado, shredded cheddar cheese, and chopped cilantro evenly among the warmed tortillas. Top each taco with a spoonful of salsa.
  • Serve the breakfast tacos with lime wedges on the side for a burst of fresh citrus flavor.
