Equipment

  • 1 Large skillet Preferably non-stick, for cooking the hash and eggs

Ingredients
  

  • 2 medium Sweet potatoes Peeled and diced
  • 1 large Onion Chopped
  • 1 bell pepper Bell pepper Diced
  • 2 cloves Garlic Minced
  • 1/2 teaspoon Paprika
  • to taste Salt and pepper
  • 2 tbsp Olive oil For cooking
  • 4 Eggs
  • as needed Salt and pepper For seasoning

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add sweet potatoes, stirring occasionally, until they start to soften.
  • Add onions, bell pepper, and garlic to the skillet. Cook until the vegetables are soft.
  • Season with paprika, salt, and pepper to taste. Continue to cook until the sweet potatoes are crispy on the outside.
  • In the same skillet, push the hash to one side and crack the eggs into the cleared space. Season with salt and pepper.
  • Cook the eggs to your liking, preferably until the whites are set but the yolks are still runny for an 'over easy' style.
  • Serve the hash with the eggs over easy on top.

Notes

For a spicier version, add a dash of cayenne pepper or sliced jalapeños to the hash while cooking.
