Ingredients
  

  • 1 cup Mashed sweet potatoes
  • 1 cup All-purpose flour
  • 2 tbsp Brown sugar
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 cup Milk
  • 2 Eggs Lightly beaten
  • 3 tbsp Melted butter Cooled slightly
  • 1 tsp Vanilla extract

Instructions
 

  • In a large mixing bowl, whisk together the mashed sweet potatoes, milk, eggs, melted butter, and vanilla extract until well combined.
  • In another bowl, combine the flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  • Serve warm with your favorite toppings such as maple syrup, fresh fruits, or a dollop of whipped cream.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
