Ingredients
  

  • 1 Pie crust Store-bought or homemade
  • 2 cups Sweet potatoes Peeled and cubed
  • 1 cup Spinach Fresh, chopped
  • 1 cup Cheddar cheese Shredded
  • 4 Eggs Beaten
  • 1 cup Milk
  • 1 tsp Salt
  • 1/2 tsp Black pepper Ground
  • 1/2 tsp Nutmeg Ground

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Place the pie crust into the quiche pan and set aside.
  • In a mixing bowl, combine the cubed sweet potatoes, chopped spinach, and shredded cheddar cheese.
  • In another bowl, whisk together the eggs, milk, salt, black pepper, and nutmeg.
  • Pour the egg mixture over the sweet potato mixture and stir to combine.
  • Pour the combined filling into the prepared pie crust.
  • Bake in the preheated oven for 45 minutes, or until the quiche is set and the top is golden brown.
  • Allow the quiche to cool for a few minutes before slicing and serving.

Notes

You can substitute regular milk with any non-dairy milk for a lactose-free version.
