Equipment

  • 1 9x13-inch baking dish For baking the strata
  • 1 Large mixing bowl For preparing the custard and mixing ingredients
  • 1 Skillet For sautéing vegetables

Ingredients
  

  • 8 cups Bread cubes Day-old, cut into 1-inch cubes
  • 1 cup Chopped bell peppers Mixed colors
  • 1 cup Chopped spinach Fresh
  • 1 cup Chopped mushrooms
  • 1 cup Grated cheese Cheddar or a mix
  • 6 Large eggs
  • 2 cups Milk Whole or 2%
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, sauté the bell peppers, spinach, and mushrooms until they're tender, about 5-7 minutes.
  • In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper.
  • In a greased 9x13-inch baking dish, layer half of the bread cubes, then half of the sautéed vegetables, and half of the grated cheese. Repeat the layers with the remaining bread, vegetables, and cheese.
  • Pour the egg and milk mixture evenly over the layered bread and vegetables. Lightly press down on the top to ensure the bread absorbs the liquid.
  • Cover the baking dish with aluminum foil and let it sit for at least 30 minutes, or overnight in the refrigerator for a make-ahead option.
  • Bake in the preheated oven for 45 minutes, or until the strata is puffed up and golden brown on top and the center is set.
  • Let the strata cool for a few minutes before serving.

Notes

Feel free to customize the vegetables and cheese to your liking. You can also add cooked sausage or bacon for an extra addition.
