For the Wrap:
- 2 large eggs
- 1/4 cup fresh spinach leaves
- 1 whole-wheat tortilla
- 2 tbsp diced tomatoes
- 2 tbsp diced red bell pepper
- 1 tbsp diced red onion
- Salt and pepper to taste
- 1/4 cup shredded cheddar cheese (optional)
- Cooking spray or a small amount of olive oil
Prepare Your Filling:In a small bowl, whisk the eggs until well beaten. Season with a pinch of salt and pepper. Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or a small amount of olive oil. Add the diced tomatoes, red bell pepper, and red onion to the skillet.
