Ingredients
  

For the Wrap:

  • 2 large eggs
  • 1/4 cup fresh spinach leaves
  • 1 whole-wheat tortilla
  • 2 tbsp diced tomatoes
  • 2 tbsp diced red bell pepper
  • 1 tbsp diced red onion
  • Salt and pepper to taste
  • 1/4 cup shredded cheddar cheese (optional)
  • Cooking spray or a small amount of olive oil

Instructions
 

  • Prepare Your Filling:
    In a small bowl, whisk the eggs until well beaten. Season with a pinch of salt and pepper. Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or a small amount of olive oil. Add the diced tomatoes, red bell pepper, and red onion to the skillet. Sauté for about 2-3 minutes until they begin to soften.
  • Cook the Eggs:
    Pour the beaten eggs over the sautéed vegetables. Let them cook undisturbed for a minute or so until the edges start to set.
  • Add Spinach and Cheese:
    Add the fresh spinach leaves evenly over the eggs. If desired, sprinkle shredded cheddar cheese on top.
  • Wrap It Up:
    Once the eggs are fully set and the cheese is melted (if using), carefully slide the egg and veggie mixture onto the whole-wheat tortilla.
  • Roll Your Wrap:
    To make the wrap, fold in the sides of the tortilla and then roll it up from the bottom, ensuring all the delicious fillings are snug inside.
  • Slice and Serve:
    If you like, you can slice the wrap in half diagonally for easier eating. Serve it hot, and enjoy a wholesome breakfast on the go!
