  • 2 large eggs
  • 1/4 cup fresh spinach leaves
  • 1 whole-wheat tortilla
  • 2 tbsp diced tomatoes
  • 2 tbsp diced red bell pepper
  • 1 tbsp diced red onion

  • 1/4 cup shredded cheddar cheese (optional)

  • Prepare Your Filling:
