Follow this recipe to bake beautiful and delicious Macarons, the classic French treat that consists of two almond meringue cookies filled with a layer of buttercream, jam, or ganache.

Equipment

  • 1 Baking sheet Lined with parchment paper
  • 1 Piping bag With a round tip
  • 1 Electric mixer For whipping egg whites
  • 1 Sieve For sifting almond flour and powdered sugar

Ingredients
  

  • 100 g Almond flour Finely ground
  • 180 g Powdered sugar
  • 100 g Egg whites At room temperature
  • 1/4 tsp Cream of tartar
  • 50 g Granulated sugar
  • Food coloring Optional, gel preferred
  • 100 g Unsalted butter Softened
  • 200 g Powdered sugar Sifted
  • 1 tsp Vanilla extract
  • Food coloring or flavor extract Optional

Instructions
 

  • Sift almond flour and powdered sugar together into a large bowl.
  • In a separate bowl, whip egg whites and cream of tartar until foamy, then gradually add granulated sugar until stiff peaks form.
  • Fold in the sifted almond flour and powdered sugar into the whipped egg whites gently until the mixture is smooth and shiny. If using, add food coloring.
  • Transfer the mixture to a piping bag fitted with a round tip.
  • Pipe 1-inch circles onto the prepared baking sheet, spaced at least 1-inch apart.
  • Tap the baking sheet on the counter to release air bubbles.
  • Let the piped shells stand at room temperature for 30 minutes to form a skin.
  • Preheat oven to 300°F (150°C) and bake for about 15 minutes, or until the shells are set.
  • Cool completely on the baking sheet before filling.
  • Beat softened butter until creamy, then gradually add powdered sugar until light and fluffy. Mix in vanilla extract or desired flavoring.
  • If using, add food coloring to match or complement the macaron shells.
  • Transfer the filling into a piping bag and pipe onto the flat side of a macaron shell, then sandwich with another shell.
  • Repeat with remaining shells and filling.

Notes

Ensure all equipment is completely grease-free and that egg whites are at room temperature for best results. Macarons will improve in taste and texture after refrigerating for 24 hours.
