  • 1 Muffin tin For baking the muffins
  • 1 Mixing bowl For combining ingredients

Ingredients
  

  • 1 1/2 cups Wheat bran
  • 1 cup Buttermilk
  • 1/3 cup Vegetable oil
  • 1 Egg Beaten
  • 2/3 cup Brown sugar Packed
  • 1 tsp Vanilla extract
  • 1 cup Whole wheat flour
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Raisins Optional

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin or line with paper liners.
  • In a large bowl, mix the wheat bran and buttermilk, and let it sit for 10 minutes.
  • Stir in vegetable oil, beaten egg, brown sugar, and vanilla extract into the bran mixture.
  • In another bowl, whisk together the whole wheat flour, baking soda, baking powder, and salt.
  • Add the dry ingredients to the bran mixture and stir until just combined. Fold in raisins if using.
  • Spoon the batter into the prepared muffin cups, filling them about 3/4 full.
  • Bake for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For additional flavor, add a teaspoon of cinnamon or ginger to the dry ingredients.
