- 3 tbsp Olive oil
- 1 large Onion Finely chopped
- 2 cloves Garlic Minced
- 1 large Red bell pepper Finely chopped
- 1 large Green bell pepper Finely chopped
- 1 can Diced tomatoes 400 g
- 1 tsp Paprika
- to taste Salt
- to taste Black pepper
- 4 Eggs
- 1/4 cup Fresh parsley Chopped, for garnish
- to taste Grated cheese Optional
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat. Add the onions and sauté until translucent.
- Add the minced garlic and cook for another minute.
- Stir in the chopped bell peppers and cook until they begin to soften, about 5 minutes.
- Add the diced tomatoes, paprika, salt, and black pepper. Simmer the mixture for 10-15 minutes until the sauce thickens.
