Ingredients
  

  • 1 cup All-purpose flour Sifted
  • 1 1/2 tsp Baking powder
  • 1/4 tsp Salt
  • 5 Eggs Separated
  • 1 cup Sugar Divided
  • 1/3 cup Whole milk
  • 1 tsp Vanilla extract
  • 1 cup Heavy cream
  • 1 cup Evaporated milk
  • 1 cup Sweetened condensed milk
  • 1 1/2 cups Heavy cream
  • 1 cup Sugar
  • 1 tsp Vanilla extract
  • to taste Ground cinnamon For garnish

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Separate the eggs, placing the yolks in one bowl and the whites in another.
  • Beat the egg yolks with 3/4 cup of sugar until pale and fluffy, then mix in the milk and vanilla extract.
  • Gently fold the egg yolk mixture into the flour mixture until just combined.
  • In a separate bowl, beat the egg whites with the remaining 1/4 cup of sugar until stiff peaks form. Fold this into the batter gently.
  • Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  • In a bowl, whisk together the heavy cream, evaporated milk, and sweetened condensed milk.
  • When the cake is done baking, let it cool for 10 minutes, then poke holes all over the cake using a fork.
  • Slowly pour the milk mixture over the cake, ensuring it gets absorbed. Refrigerate for at least 1 hour or overnight.
  • In a mixing bowl, whip the heavy cream with the sugar and vanilla extract until stiff peaks form.
  • Spread the whipped cream over the top of the cake.
  • Garnish with ground cinnamon before serving.
