  • 1 Loaf pan 9x5 inch
  • 1 Large mixing bowl
  • 1 Grater For grating zucchini

Ingredients
  

  • 1 1/2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/2 cup Vegetable oil
  • 1 cup Granulated sugar
  • 2 Large eggs Room temperature
  • 1 tsp Vanilla extract
  • 1 1/2 cups Grated zucchini About 1 medium zucchini
  • 1/2 cup Chopped walnuts Optional

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, whisk together the vegetable oil, sugar, eggs, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Fold in the grated zucchini and chopped walnuts, if using.
  • Pour the batter into the prepared loaf pan.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
