If you’re craving a delightful and unique dessert, look no further than Bienenstich, also known as Bee Sting Cake. This traditional German treat combines a light, fluffy yeast cake with a creamy custard filling and a crunchy almond topping. The name ‘Bee Sting’ comes from the idea that the cake is so irresistibly sweet, it could attract bees. It’s perfect for afternoon tea, a special occasion, or simply indulging in a sweet moment.
Tips to make the Bienenstich (Bee Sting Cake) recipe:
1. Use Fresh Yeast Dough: For a fluffy and light cake, ensure your yeast is fresh and active. Let the dough rise in a warm, draft-free place to achieve the best texture.

We have been using these at my house, and a very similar Korean version for years, and we still have them from 10+ years ago. I highly recommend taking a look, and they are often on sale!
2. Prepare the Custard Filling in Advance: Make the vanilla custard filling ahead of time and allow it to chill in the refrigerator. This will help it set properly and make it easier to spread evenly between the cake layers.
3. Toast the Almonds: For added flavor and crunch, toast the sliced almonds before adding them to the honey-butter topping. This step enhances their nutty taste and aroma.
4. Use a Springform Pan: Baking the cake in a springform pan makes it easier to remove and handle without damaging its delicate structure. It ensures clean sides and a perfect shape every time.
