Equipment

  • 1 Large pot For cooking the soup
  • 1 Blender For pureeing the asparagus

Ingredients
  

  • 1 lb Asparagus Ends trimmed, cut into pieces
  • 1 tbsp Olive oil
  • 1 cup Onion Chopped
  • 2 cloves Garlic Minced
  • 4 cups Chicken or vegetable broth
  • 1 tsp Salt Adjust to taste
  • 1/2 cup Heavy cream
  • to taste Black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and garlic, sauté until onions are translucent.
  • Add chopped asparagus and cook for about 5 minutes.
  • Pour in the broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  • Use a blender to puree the mixture until smooth.
  • Return the soup to the pot, stir in heavy cream, and season with salt and black pepper.
  • Heat through but do not allow to boil. Serve hot.

Notes

For a vegetarian version, use vegetable broth instead of chicken broth. You can also use coconut milk for a dairy-free option.
