  • 1 Tart Pan 9-inch with removable bottom
  • 1 Mixing Bowl
  • 1 Oven Preheated to 350°F (175°C)

Ingredients
  

  • 1 1/4 cups All-purpose flour
  • 1/2 cup Unsalted butter Chilled and diced
  • 1/4 cup Granulated sugar
  • 1 Egg yolk
  • 2 tbsp Cold water
  • 1/2 cup Unsalted butter Softened
  • 1/2 cup Granulated sugar
  • 1 Egg
  • 1 cup Almond meal
  • 1 tsp Vanilla extract
  • 6-8 Apricots Halved and pitted
  • 2 tbsp Apricot jam For glazing

Instructions
 

  • In a mixing bowl, combine flour and sugar. Add chilled butter and rub until mixture resembles coarse crumbs.
  • Add egg yolk and cold water, mix until dough comes together. Wrap and refrigerate for 30 minutes.
  • Roll out dough and fit it into the tart pan. Trim edges and prick base with a fork.
  • In a bowl, cream butter and sugar until light and fluffy. Add egg, almond meal, and vanilla; mix until smooth.
  • Spread frangipane filling evenly over the prepared tart crust.
  • Place apricot halves cut side up over the frangipane filling.
  • Bake in preheated oven for 40 minutes or until golden and set.
  • Warm apricot jam and brush over the tart to glaze. Serve warm or at room temperature.
