We have been using these at my house, and a very similar Korean version for years, and we still have them from 10+ years ago. I highly recommend taking a look, and they are often on sale!
2. Soak the Bran: Soaking the bran in milk or buttermilk before mixing it into the batter will make the muffins more tender and flavorful. Let it sit for at least 10 minutes to absorb the moisture.
3. Add Sweeteners: For a touch of sweetness, you can use honey, maple syrup, or even a bit of brown sugar. Adjust the amount according to your preference for sweetness.
4. Include Fruits and Nuts: Elevate the nutritional value by adding dried fruits like raisins or cranberries, or nuts like walnuts or almonds. This adds a delightful crunch and extra flavor.
5. Don’t Overmix: When combining the wet and dry ingredients, mix just until combined. Overmixing can result in dense muffins.
Enjoy your bran muffins fresh out of the oven or store them in an airtight container for a healthy grab-and-go breakfast all week long!
