Ingredients
  

  • 200 g Dark chocolate Finely chopped
  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 6 Egg yolks Room temperature
  • 1/3 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 1/4 tsp Salt

Instructions
 

  • Preheat the oven to 325°F (160°C).
  • In a saucepan, combine heavy cream and milk, and heat until steaming.
  • Pour over chopped chocolate and whisk until smooth.
  • In a bowl, whisk together egg yolks, sugar, vanilla extract, and salt.
  • Slowly whisk warm chocolate mixture into the egg mixture to temper the eggs.
  • Strain the custard through a fine mesh sieve into a clean bowl.
  • Divide the custard evenly among ramekins.
  • Place ramekins in a baking dish and fill with hot water halfway up the sides of the ramekins.
  • Bake for 35-40 minutes or until the edges are set but the center is slightly jiggly.
  • Cool to room temperature, then refrigerate for at least 2 hours before serving.
