  • 1 Mixing Bowl For assembling the salad

Ingredients
  

  • 1 can Chickpeas Drained and rinsed
  • 2 tbsp Olive oil For roasting
  • 1 tsp Paprika
  • 4 Eggs Hard-boiled and sliced
  • 4 cups Mixed greens Such as spinach, arugula, or lettuce
  • 1/2 cup Cherry tomatoes Halved
  • to taste Salt and pepper
  • 3 tbsp Olive oil
  • 1 tbsp Lemon juice Freshly squeezed
  • 1 tsp Honey
  • 1/2 tsp Mustard Dijon preferred

Instructions
 

  • Preheat the oven to 400°F (200°C).
