  • 1 Non-stick pan For cooking the quinoa and eggs
  • 1 Spatula For stirring

Ingredients
  

  • 1 cup Quinoa Rinsed and drained
  • 2 cup Water
  • 2 Eggs Beaten
  • 2 tbsp Olive oil
  • 1 cup Mixed vegetables Chopped (carrots, peas, bell peppers)
  • 3 tbsp Soy sauce
  • 2 cloves Garlic Minced
  • 1 tsp Sesame oil For flavor
  • to taste Salt & pepper

Instructions
 

  • In a medium pot, bring water to a boil. Add quinoa, reduce heat, and simmer for about 15 minutes or until all water is absorbed. Set aside.
  • Heat olive oil in a non-stick pan over medium heat. Add the beaten eggs and scramble until fully cooked. Set aside.
  • In the same pan, add a bit more olive oil if needed and sauté minced garlic until fragrant.
  • Add mixed vegetables and cook until tender.
  • Add the cooked quinoa and scrambled eggs back to the pan. Stir to combine.
  • Pour in the soy sauce and sesame oil, stirring everything together until well-mixed and heated through.
  • Season with salt and pepper to taste, and serve hot.

Notes

For a vegetarian version, omit the eggs and add tofu or additional vegetables.
