Equipment

  • 1 Non-stick frying pan For frying halloumi and eggs
  • 1 Spatula For flipping halloumi and eggs

Ingredients
  

  • 4 slices Halloumi cheese About 1 cm thick
  • 2 Eggs Free-range if possible
  • 2 Burger buns Cut in half
  • to taste Butter For toasting buns
  • to taste Salt and black pepper To season eggs
  • 1 Tomato Sliced
  • 1 handful Arugula Fresh
  • to taste Mayonnaise Optional

Instructions
 

  • Heat a non-stick frying pan over medium heat, add the halloumi slices, and fry for 2-3 minutes each side until golden brown.
  • Remove the halloumi from the pan and set aside. In the same pan, crack the eggs, season with salt and black pepper, and fry until the yolks are cooked to your liking.
  • Butter the cut sides of the burger buns and place them in the pan to toast lightly.
  • Assemble the burger by adding mayonnaise on the bun if desired, placing a layer of arugula followed by tomato slices, fried halloumi, and the fried egg.
  • Top with the other half of the bun, serve, and enjoy.

Notes

For a spicier version, add a dash of hot sauce to the mayonnaise.
