  • 1 Ice cream maker For churning the gelato

Ingredients
  

  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 5 Egg yolks Large
  • 2/3 cup Granulated sugar
  • 1 tsp Vanilla extract Or vanilla bean paste
  • 1/4 tsp Salt

Instructions
 

  • In a saucepan, heat the milk and cream over medium heat until it just begins to steam.
  • In a mixing bowl, whisk together the egg yolks and sugar until pale and thick.
  • Gradually whisk the hot milk mixture into the egg yolk mixture to temper the eggs.
  • Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened enough to coat the back of a spoon.
  • Remove from heat and stir in the vanilla extract and salt.
  • Strain the custard through a fine-mesh sieve into a bowl and let it cool to room temperature.
