Equipment

  • 1 Saucepan For making the choux pastry
  • 1 Mixing bowl For mixing the batter
  • 1 Baking sheet For baking the gougères
  • 1 Piping bag For piping the dough

Ingredients
  

  • 1 cup Water
  • 1/2 cup Unsalted butter Cut into pieces
  • 1/2 tsp Salt
  • 1 cup All-purpose flour
  • 4 Large eggs At room temperature
  • 1 cup Gruyère cheese Grated
  • 1/4 tsp Black pepper Freshly ground
  • 1/4 tsp Nutmeg Freshly grated

Instructions
 

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a saucepan, combine water, butter, and salt; bring to a boil over medium heat.
  • Remove from heat and add the flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  • Return to heat and continue stirring for 1-2 minutes to dry the dough slightly.
  • Transfer the dough to a mixing bowl and let it cool slightly. Beat in eggs one at a time until smooth and shiny.
  • Stir in grated Gruyère cheese, black pepper, and nutmeg.
  • Spoon the dough into a piping bag fitted with a large round tip. Pipe small mounds onto the prepared baking sheet.
  • Bake for 10 minutes; reduce oven temperature to 375°F (190°C) and bake for an additional 20 minutes or until puffed and golden brown.
  • Serve warm or at room temperature.
