2. Keep Your Hands Wet: When handling the mochi dough, keep your hands wet to prevent it from sticking. Water serves as a natural barrier, making it easier to shape the mochi around the custard filling.

3. Prepare Custard Filling in Advance: Make the custard ahead of time and let it cool completely before filling the mochi. This not only enhances the flavor but also makes the assembly process much smoother.

4. Use Cornstarch for Dusting: Dust your work surface and hands with cornstarch to prevent sticking when rolling and shaping the mochi. Cornstarch is preferable to flour as it won’t alter the mochi’s taste.

5. Seal Tightly: Make sure the edges of the mochi are tightly sealed to encase the custard. A perfect seal ensures a delightful burst of flavor with every bite.
