  • 1 Large pot For cooking the soup
  • 1 Ladle For serving

Ingredients
  

  • 2 tbsp Olive oil
  • 1 Onion Chopped
  • 2 cloves Garlic Minced
  • 1 tsp Ground cumin
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Ground turmeric
  • 1/4 tsp Ground ginger
  • 400 g Tomatoes Diced
  • 1 cup Lentils Rinsed and drained
  • 1 cup Chickpeas Cooked or canned, drained
  • 5 cups Vegetable broth
  • to taste Salt and pepper
  • 6 Eggs Poached

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until soft.
  • Stir in cumin, cinnamon, turmeric, and ginger, cooking for 1-2 minutes to release their aromas.
  • Add diced tomatoes, lentils, chickpeas, and vegetable broth. Bring to a boil, then reduce the heat to low and let simmer for 40-50 minutes until lentils are tender.
  • Season with salt and pepper to taste.
  • Poach the eggs separately in simmering water until the whites are set.
  • Serve hot, ladling the soup into bowls and topping each with a poached egg.

Notes

For added flavor, garnish with fresh coriander and a squeeze of lemon juice.
