- 1 Dutch oven or oven-safe skillet For baking the beans
- 1 Mixing Bowl For mixing ingredients
Ingredients
- 2 tbsp Olive oil
- 1 Onion Finely chopped
- 2 cloves Garlic Minced
- 1 can Tomato sauce 15 oz
- 1/2 cup Maple syrup
- 1 tbsp Apple cider vinegar
- 2 tsp Dijon mustard
- 4 cups Cooked white beans Or 2 cans, rinsed and drained
- to taste Salt and pepper
- 4 Eggs Large
- as needed Chopped parsley For garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a Dutch oven or oven-safe skillet over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and cook for another 1-2 minutes.
- Stir in the tomato sauce, maple syrup, apple cider vinegar, and Dijon mustard. Cook for 5 minutes, stirring occasionally.
- Add the cooked white beans to the mixture. Season with salt and pepper to taste. Stir well to combine.
- Transfer the skillet or Dutch oven to the preheated oven and bake for 25-30 minutes, until the sauce has thickened and the beans are tender.
- Remove the beans from the oven, make four wells in the beans with the back of a spoon.
- Crack an egg into each well.
