- 1 Non-stick skillet For cooking the eggs
- 1 Whisk For beating the eggs
Ingredients
- 4 Eggs Beaten
- 2 tbsp Olive oil
- 2 Whole wheat tortillas
- 1/2 cup Feta cheese Crumbled
- 1 Tomato Chopped
- 1 Cucumber Chopped
- 1/4 cup Red onion Finely chopped
- 1/4 cup Kalamata olives Sliced
- to taste Salt
- to taste Black pepper
Instructions
- Heat olive oil in a non-stick skillet over medium heat.
- Pour in beaten eggs and scramble until just cooked through. Season with salt and black pepper.
- Warm the tortillas in a dry skillet or microwave.
