  • 1 Pan For scrambling eggs
  • 1 Baking Dish To hold the peppers while baking

Ingredients
  

  • 4 Bell peppers Any color, tops cut off and seeds removed
  • 6 Eggs Lightly beaten
  • 1 tbsp Butter For scrambling the eggs
  • 4 oz Goat cheese Crumbled
  • 1/4 cup Chives Chopped
  • 1/2 tsp Salt Or to taste
  • 1/4 tsp Black pepper Or to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Slice the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.
  • In a pan, heat butter over medium heat. Add the beaten eggs and scramble until just set.
  • Remove the scrambled eggs from heat and stir in the crumbled goat cheese, chopped chives, salt, and black pepper.
  • Stuff each bell pepper with the egg mixture and place the tops back on the peppers.
  • Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  • Serve hot, garnished with extra chives if desired.
