  • 1 Baking sheet For baking the galette
  • 1 Rolling Pin For rolling out the dough

Ingredients
  

  • 1 1/4 cups All-purpose flour
  • 1/2 cup Cold unsalted butter Cut into small pieces
  • 1/4 cup Ice water
  • 1/4 tsp Salt
  • 2 cups Assorted vegetables Chopped (e.g., mushrooms, spinach, bell peppers)
  • 1 cup Cheese Grated (e.g., Gruyère, cheddar)
  • 1 tbsp Olive oil
  • 1 tsp Herbs de Provence Or other desired herbs
  • to taste Salt and pepper

Instructions
