  • 1 Pot For boiling the noodles
  • 1 Mixing Bowl For mixing the sauce and noodles

Ingredients
  

  • 200 g Somyeon (thin wheat noodles)
  • 1 cup Cucumber Julienned
  • 1/2 cup Carrot Julienned
  • 1/2 cup Kimchi Chopped
  • 2 tbsp Gochujang (Korean chili paste)
  • 1 tbsp Soy sauce
  • 1 tbsp Sugar
  • 1 tbsp Sesame oil
  • 1 tbsp Vinegar
  • 1 tbsp Sesame seeds Toasted

Instructions
 

  • Cook the somyeon noodles in boiling water according to package instructions. Drain and rinse under cold water. Set aside.
  • In a mixing bowl, combine gochujang, soy sauce, sugar, sesame oil, vinegar, and sesame seeds to make the sauce.
  • Add the cooked noodles to the bowl with the sauce and toss to combine.
  • Add cucumber, carrot, and kimchi to the noodles and mix well.
  • Serve immediately, garnished with additional sesame seeds and sliced cucumber if desired.

Notes

Adjust the level of spiciness by varying the amount of gochujang added to the sauce.
