Equipment

  • 1 Medium saucepan For cooking lentils
  • 1 Small saucepan For boiling eggs

Ingredients
  

  • 1 cup Lentils Rinsed and drained
  • 2 Eggs Large
  • 1 Cucumber Diced
  • 1 Tomato Chopped
  • 1 tbsp Olive oil
  • to taste Salt and pepper

Instructions
 

  • Cook the lentils in a medium saucepan with 2 cups of water for 20-25 minutes until tender.
  • In the meantime, place eggs in a small saucepan, cover with water, and bring to a boil. Cook for 9-12 minutes, then cool under cold running water, and peel.
  • Once lentils are cooked, drain any excess water and season with salt, pepper, and olive oil.
  • Divide lentils between two bowls, top each with slices of boiled egg, cucumber, and tomato.
  • Drizzle extra olive oil if desired and serve immediately.
