- 1 bag Tortilla chips
- 200 g Chorizo Casing removed and crumbled
- 4 Eggs Lightly beaten
- 1 cup Cheddar cheese Shredded
- 1 cup Monterey Jack cheese Shredded
- 1 medium Avocado Diced
- 1/2 cup Fresh salsa
- 1/4 cup Cilantro Chopped
- to taste Salt and pepper
Instructions
- Preheat oven to 375°F (190°C). In a skillet, cook the crumbled chorizo over medium heat until browned, approximately 5 minutes. Remove from skillet and set aside.
- In the same skillet, add the beaten eggs seasoned with salt and pepper. Scramble over medium heat until just set. Remove from heat.
