  • 1 Saucepan For cooking quinoa
  • 1 Non-stick skillet For frying eggs

Ingredients
  

  • 1 cup Quinoa Rinsed
  • 2 cup Water
  • 2 Eggs Fried
  • 1 cup Baby spinach Fresh
  • 1 Avocado Sliced
  • 1/4 cup Cherry tomatoes Halved
  • 1 tbsp Olive oil Extra virgin
  • to taste Salt and pepper
  • 1 tbsp Chopped fresh herbs Optional, for garnish

Instructions
 

  • In a saucepan, bring 2 cups of water to a boil and add the quinoa.
  • Reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and water is absorbed.
  • In a non-stick skillet, heat olive oil over medium heat and fry the eggs to your preferred doneness.
  • Divide the cooked quinoa between two bowls.
  • Top each bowl with fresh baby spinach, sliced avocado, and cherry tomatoes.
  • Place a fried egg on top of each bowl.
  • Season with salt and pepper to taste, and garnish with chopped fresh herbs if desired.
  • Serve immediately and enjoy!
