Equipment

  • 1 Frying pan For cooking the eggs and vegetables
  • 1 Whisk For beating the eggs

Ingredients
  

  • 4 Eggs Beaten
  • 1 tbsp Olive oil
  • 1 Red bell pepper Chopped
  • 1 Zucchini Sliced
  • 1 Onion Sliced
  • 1/2 cup Spinach Fresh
  • 2 Sub rolls Cut in half
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Heat olive oil in a frying pan over medium heat.
  • Add onions and sauté until translucent.
  • Add bell pepper, zucchini, and continue to sauté for 3-4 minutes.
  • Add spinach and cook until wilted.
  • Push vegetables to one side of the pan and pour the beaten eggs into the other side.
  • Scramble the eggs gently and mix with the vegetables. Season with salt and pepper.
  • Load the scrambled eggs with veggies into the sub rolls and serve warm.
