- 1 Large skillet For cooking the couscous mixture
- 1 Saucepan For preparing couscous

- 1 cup Couscous Uncooked
- 2 cups Water
- 3 tbsp Olive oil Divided
- 2 Eggs Lightly beaten
- 1 cup Carrot Diced
- 1 cup Bell pepper Chopped
- 1 cup Frozen peas Thawed
- 3 tbsp Soy sauce Low sodium
- 1 tbsp Sesame oil
- to taste Salt and pepper
Instructions
- Bring water to a boil in a saucepan, remove from heat, and stir in couscous. Cover and let sit for 5 minutes, then fluff with a fork.
