Tips to make the Eggs Florentine with Creamed Spinach and English Muffin recipe:
1. Fresh Spinach is Key: While you can use frozen spinach in a pinch, opting for fresh spinach will significantly enhance the flavor and texture of the creamed spinach. Be sure to wash and drain it well before cooking.

2. Achieve Perfect Poached Eggs: For perfectly poached eggs, use fresh eggs and a dash of vinegar in the poaching water. The vinegar helps the egg whites coagulate faster, resulting in neatly formed poached eggs. A gentle swirl in the boiling water before adding the eggs can also help them keep their shape.
3. Use High-Quality English Muffins: The base of this dish is just as important as the toppings. Choose high-quality, bakery-fresh English muffins for the best results. Toasting them to the point of crispy on the outside but still soft on the inside creates the perfect platform for your toppings.
4. Season to Taste: Don’t forget to season your creamed spinach and poached eggs with salt, pepper, and a hint of nutmeg. This will bring out the flavors and add depth to the dish. A sprinkle of parmesan on top of the spinach before assembling can also add a nice cheesy touch.
