  • 1 Wok or large frying pan For stir-frying
  • 1 Spatula For stirring

Ingredients
  

  • 4 cups Cooked rice Preferably day-old
  • 3 tbsp Vegetable oil
  • 6 cloves Garlic Finely minced
  • 2 Eggs Beaten
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • to taste Salt
  • to taste Black pepper
  • 2 stalks Spring onions Chopped

Instructions
 

  • Heat vegetable oil in a large wok or frying pan over medium-high heat.
  • Add minced garlic and sauté until fragrant and golden brown, being careful not to burn it.
  • Push the garlic to one side of the pan and pour the beaten eggs into the other side. Scramble them until they are just set.
  • Add the cooked rice to the pan and stir well to combine with the garlic and eggs.
  • Pour in the soy sauce and sesame oil, and stir to evenly distribute. Season with salt and black pepper to taste.
  • Continue to stir-fry for another 3-5 minutes until the rice is heated through and slightly crispy.
  • Garnish with chopped spring onions and serve hot.

Notes

For a vegetarian version, you can omit the eggs or substitute them with tofu.
