Equipment

  • 1 Non-stick skillet For cooking the eggs
  • 1 Whisk For beating the eggs

Ingredients
  

  • 4 Eggs Beaten
  • 2 tbsp Olive oil
  • 2 Whole wheat tortillas
  • 1/2 cup Feta cheese Crumbled
  • 1 Tomato Chopped
  • 1 Cucumber Chopped
  • 1/4 cup Red onion Finely chopped
  • 1/4 cup Kalamata olives Sliced
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Pour in beaten eggs and scramble until just cooked through. Season with salt and black pepper.
  • Warm the tortillas in a dry skillet or microwave.
  • Divide the scrambled eggs between the tortillas.
  • Top with feta cheese, tomato, cucumber, red onion, and olives.
  • Roll up the tortillas to enclose the filling into a wrap.
  • Serve immediately and enjoy.

Notes

For a gluten-free option, use gluten-free tortillas.
