Whether you’re looking for something soothing during cold weather or seeking a simple yet nourishing meal, Juk is the way to go. Made with basic ingredients and customizable to suit any palate, this rice porridge promises a warm and satisfying culinary experience.
Tips to make the Juk (Korean Rice Porridge) recipe:
1. Choose the Right Rice: For the best texture, use short-grain rice. Its stickiness contributes to the porridge’s creamy consistency. Rinse the rice thoroughly before cooking to remove any excess starch.

We have been using these at my house, and a very similar Korean version for years, and we still have them from 10+ years ago. I highly recommend taking a look, and they are often on sale!
2. Stir Regularly: To prevent the rice from sticking to the bottom of the pot and ensure a smooth texture, stir the porridge regularly during cooking. A wooden spoon or spatula works best for this.
3. Use a Flavorful Stock: Although water is a common liquid used to cook Juk, using chicken, vegetable, or beef stock can significantly enhance its flavor. You can adjust the richness by varying the ratio of stock to water according to your taste.
4. Personalize with Toppings: Juk is highly customizable with various toppings. Popular additions include shredded chicken, beef, mushrooms, green onions, and even a lightly beaten egg that cooks directly in the hot porridge. Pick and choose to create a version that appeals to you.
5. Adjust Consistency: The thickness of Juk can vary based on personal preference. For a thinner porridge, add more water or stock during the cooking process. If you prefer it thicker, cook it a little longer to allow further absorption.

Way too much liquid. I would alter it from 8 cups down to 6 cups.
