  • 1 Large mixing bowl For preparing the batter
  • 1 Whisk For mixing the ingredients

Ingredients
  

  • 4 large Eggs Separated
  • 1 cup Milk
  • 3/4 cup All-purpose flour Sifted
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 1/4 cup Raisins Optional
  • 3 tbsp Butter
  • for dusting Powdered sugar

Instructions
 

  • In a large mixing bowl, whisk together the egg yolks, milk, and sugar until well combined.
  • Slowly add the sifted flour and salt to the mixture, whisking continuously until smooth.
  • In another bowl, beat the egg whites until they form stiff peaks.
  • Gently fold the beaten egg whites into the batter until just combined.
  • Melt butter in a non-stick skillet over medium heat.
  • Pour the batter into the skillet, spreading it evenly. Sprinkle raisins on top if using.
  • Cook until the underside is golden brown, then flip the pancake using two spatulas. Cook until the other side is golden brown.
  • Using a spatula or fork, tear the pancake into bite-sized pieces. Continue cooking for a few more minutes until the pieces are cooked through.
  • Serve warm, dusted with powdered sugar and accompanied by fruit compote or plum sauce.

Notes
