- 1 Frying pan or wok For stir-frying

- 1 cup Spinach Blanched
- 1 medium Carrot Julienned
- 1 medium Onion Sliced
- 5 pieces Shiitake mushrooms Soaked and sliced
- 2 tbsp Soy sauce
- 1 tbsp Sesame oil
- 1 tbsp Sugar
- 2 cloves Garlic Minced
- to taste Salt
- 1 tbsp Sesame seeds Toasted

- Cook the sweet potato glass noodles in boiling water according to package instructions, then drain and rinse under cold water.
- Stir-fry each vegetable separately in a pan with a little oil, starting with onions, then carrots, and mushrooms, seasoning each with a pinch of salt. Set aside.
