Equipment

  • 1 Pot For boiling noodles and making broth
  • 1 Strainer For draining noodles

Ingredients
  

  • 8 cups Water
  • 2 Dried anchovies Large, for broth
  • 1 Kelp Piece, roughly 4-inch square
  • 1 tbsp Soy sauce For seasoning
  • to taste Salt
  • 400 g Somyeon (thin wheat noodles)
  • 1 Carrot Julienned
  • 1 Zucchini Julienned
  • 2 Eggs Beaten and fried, cut into thin strips
  • 4 Green onions Chopped

Instructions
 

  • In a pot, bring water to a boil. Add dried anchovies and kelp, and simmer for 15 minutes.
  • Remove anchovies and kelp, add soy sauce and salt to taste.
  • Cook somyeon noodles according to package instructions. Drain and rinse under cold water.
  • Prepare garnishes: Julienne vegetables, fry eggs, and chop green onions.
  • Place noodles in bowls, pour hot broth over the noodles.
  • Top with julienned vegetables, egg strips, and green onions.
  • Serve immediately with side dishes like kimchi.

Notes

For a vegetarian version, substitute the broth ingredients with vegetable stock.
