We have been using these at my house, and a very similar Korean version for years, and we still have them from 10+ years ago. I highly recommend taking a look, and they are often on sale!
2. Pre-Bake the Tart Shells: To avoid a soggy crust, pre-bake your tart shells before adding the lemon curd. This will ensure that they are crisp and hold up well to the filling.
3. Strain the Lemon Curd: After cooking the lemon curd, strain it through a fine mesh sieve to remove any lumps or bits of cooked egg. This will give you a smooth and silky filling.
4. Use Room Temperature Butter: Add room temperature butter to your lemon curd. This helps it incorporate more smoothly and gives the curd a creamy texture.
5. Chill Before Serving: Allow the tarts to chill in the refrigerator for at least an hour before serving. This helps the lemon curd set properly and enhances the flavors.
With these tips in mind, you can create Lemon Curd Tarts that are not only beautiful but also bursting with refreshing lemon flavor. Enjoy!
