- 1/2 cup Butter Chilled and diced
- 1/4 cup Water Ice cold
- 1/2 tsp Salt
- 1 cup Sugar
- 2 tbsp All-purpose flour
- 3 tbsp Cornstarch
- 1/4 tsp Salt
- 1 1/2 cups Water
- 2 tsp Lemon zest
- 1/2 cup Lemon juice Freshly squeezed
- 2 tbsp Butter
- 4 Egg yolks Beaten
- 4 Egg whites Room temperature
- 6 tbsp Sugar
- 1/2 tsp Vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Mix flour and salt, cut in butter until mixture resembles coarse crumbs. Gradually add ice water, stirring until mixture forms a ball. Roll dough to fit a 9-inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate.
- Bake crust in preheated oven for 10 minutes, or until crust is lightly browned. Remove from oven and let cool.
- In a medium saucepan, combine 1 cup sugar, flour, cornstarch, and salt. Gradually stir in water, lemon juice, and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil.
