  • 1 cup All-purpose flour
  • 1/2 cup Butter Chilled and diced
  • 1/4 cup Water Ice cold
  • 1/2 tsp Salt
  • 1 cup Sugar
  • 2 tbsp All-purpose flour
  • 3 tbsp Cornstarch
  • 1/4 tsp Salt
  • 1 1/2 cups Water
  • 2 tsp Lemon zest
  • 1/2 cup Lemon juice Freshly squeezed
  • 2 tbsp Butter
  • 4 Egg yolks Beaten
  • 4 Egg whites Room temperature
  • 6 tbsp Sugar
  • 1/2 tsp Vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Mix flour and salt, cut in butter until mixture resembles coarse crumbs. Gradually add ice water, stirring until mixture forms a ball. Roll dough to fit a 9-inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate.
  • Bake crust in preheated oven for 10 minutes, or until crust is lightly browned. Remove from oven and let cool.
  • In a medium saucepan, combine 1 cup sugar, flour, cornstarch, and salt. Gradually stir in water, lemon juice, and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil.
  • Stir in butter. Beat egg yolks in a small bowl and gradually stir in 1/2 cup of hot sugar mixture. Stir egg yolk mixture back into remaining sugar mixture in the saucepan. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat.
