Equipment

  • 1 Wok For stir-frying the rice
  • 1 Spatula For stirring the ingredients

Ingredients
  

  • 600 g Cooked rice Preferably cold, day-old rice
  • 2 tbsp Vegetable oil
  • 3 cloves Garlic Minced
  • 2 Shallots Finely sliced
  • 2 tbsp Kecap Manis Sweet soy sauce
  • 1 tbsp Soy sauce
  • 1 tsp Sambal Oelek Adjust to taste
  • 2 Eggs Beaten
  • to taste Salt
  • to taste Pepper

Instructions
 

  • Heat the vegetable oil in a wok over medium heat.
  • Add minced garlic and sliced shallots, sauté until fragrant.
  • Push the garlic and shallots to the side of the wok and pour in the beaten eggs, scrambling until just set.
  • Add the cooked rice to the wok, breaking up any clumps.
  • Stir in kecap manis, soy sauce, and sambal oelek, mixing well to coat the rice evenly.
  • Season with salt and pepper to taste, and stir-fry for another 5 minutes until the rice is heated through.
  • Serve hot, garnished with additional toppings like fried shallots, sliced cucumber, tomatoes, and a fried egg if desired.

Notes

For a vegetarian version, omit eggs or add tofu. Adjust sambal oelek to control the spiciness.
