  • 1 9-inch (23 cm) pie crust, homemade or store-bought
  • 6 oz (170g) bacon, chopped
  • 1 1/2 cup Gruyère cheese, grated
  • 4 large eggs
  • 1 1/2 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground nutmeg

Instructions
 

  • Preheat your oven to 375°F (190°C). Roll out the pie crust and gently press it into a 9-inch (23 cm) quiche or tart pan. Trim any excess dough, and prick the bottom of the crust with a fork. Line the crust with parchment paper or aluminum foil, and fill with pie weights or dried beans. Blind bake the crust for 15 minutes, then remove the weights and parchment paper, and bake for an additional 5 minutes. Remove from the oven and set aside.
  • In a skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain.
  • n a large bowl, whisk together the eggs, heavy cream, salt, black pepper, and ground nutmeg until well combined.
  • Sprinkle the cooked bacon and grated Gruyère cheese evenly over the bottom of the pre-baked crust. Pour the egg mixture over the bacon and cheese.
